A struggle followed before the 56-year-old man was pulled from the car and put in a chokehold until he passed out and fell on the road.
The carjacker then stole the car and fled as the victim woke up and dived on to the Toyota to prevent it from leaving, but fell off on to the road.
The victim suffered cuts and swelling to his face and his car was found on fire in bushland the next day in nearby Parkinson.
A fire was quickly brought under control at the scene - but the car was unable to be salvaged.
Detectives have since released an image of the man they believe is responsible for the violent carjacking.
He is believed to be in his 20s with a fair complexion, slim build, clean shaven with light brown shaggy hair.
