Bout, 57, first worked as part of Louis van Gaal's backroom staff at Old Trafford and became chief scout in October 2016.
His trip to northern Spain was reportedly centred around Norwegian ace Odegaard.
But a midfielder and forward from out-of-sorts Valencia were also on his radar.
Battling for the signing of Odegaard threatens to be a major undertaking with Sociedad only having the player on loan from Real Madrid.
An initial two-year deal was signed between the teams but the 21-year-old's impressive form has raised the prospect of Madrid seeking a recall.
In October, Odegaard stated: "My intention is to stay here for two years and I think it's important for me. I've changed teams for two years and I think that for young players, for me included, it's good to have some stability."
While the player's current club look to battle any recall option, Ajax are reportedly one ambitious side attempting to make hay with a prospective bid.
